Sabudana vada – Surbhi Gupta

Ingredients:

  • Sago (sabudana) 1 cup, soaked overnight or min. 2 hrs
  • 2 medium potatoes boiled and mashed
  • ½ cup roasted peanuts coarsely ground
  • 2 Green chillies finely chopped
  • 2 tablespoons fresh coriander leaves chopped
  • Lemon juice ½ tablespoon
  • Salt to taste
  • Jeera powder 1 tsp
  • Ghee

Recipe

  1. Squeeze out water from sago and add the sago to a big bowl.
  2. Add mashed potatoes and rest of the ingredients, except ghee. Mix together.
  3. Divide the mixture into lemon sized balls. Flatten between palms to make a cutlet/tikki like shape.
  4. Apply little ghee on both sides.
  5. Air fry the vadas at full heat for 15 mins or deep fry.
  6. Enjoy with green chutney or as it is.
